Chili with Meat and Beans 12/5/2020

Ingredients
- [1] Pound lean meat (beef, chicken, turkey)
- [3] Onions (medium)
- [2] Heads of garlic (yes heads)
- [1] Tablespoon italian seasoning
- [3] Tablespoons of chili powder (or more to taste)
- [1] Tablespoon of Garlic Salt
- [1] Good grind of black pepper (to taste)
- [2] Big cans of diced tomatoes
- [2] Big cans of tomato sauce
- [1] Large can of Kidney beans (or whatever you like), reserving 1/4 to 1/2 cup of liquid, draining the rest
- [1/4] cup of red wine
- [-] Heavy pot with a heavy lid, a cast iron dutch oven is perfect
Instructions
- Brown meat until cooked through
- Add diced onions, and saute until they become translucent
- Add in spices and mix in
- Add diced garlic and saute until they become translucent
- Cook until onions and garlic are partially caramelized
- Remove some of the fat if desired
- Deglaze with wine, scraping to get all the solids off the bottom of the pan
- Add
- Add in reserved liquid from the beans, and the diced tomatoes and cook to reduce until thickened
- Add in beans
- Add in tomato sauce
- let simmer for an hour
- Adjust seasoning and spice to taste
- Simmer for the remaining time and then serve
Side Dish: Corn bread is a nice (our favorite is: krusteaz honey-cornbread-muffin-mix)
Toppings: tortilla strips crushed over to top before serving with a nice cheddar or queso fresco or sour cream is nice too
